Crave Cupcake "The Princess" Vanilla Ice Cream Cake

When I first moved to Calgary from Nova Scotia, a friend of mine introduced me to Crave Cupcakes. Once I learned how to make ice cream cakes, every year for her birthday, I make her one out of her favourite cupcake as a thank-you.

For anyone who is interested, here is how I did it. I bought a 3 big cupcakes. I scraped the icing off the top reserving it for later, and then froze the cake part. Then I made the vanilla ice cream. I added a few drops of red food colouring before churning it to add a pink hue to the cake. When the ice cream was just about done, I cut the frozen cakes into small cubes and added it to the ice cream. Then I made the cake. I iced it with the pink buttercream icing that I saved and garnished the finished product with a mini cupcake.

Mint Chocolate Chip Ice Cream Cake

My buddy Jeff recently turned 30 and I had him and his family over for dinner to celebrate. His parents were visiting from back home in Cape Breton so I went all out. There was so much food we literally could hardly walk.

I missed his wife's birthday while I was on my trip to Europe/UK so I made an ice cream cake of her favourite flavour. It has an Oreo cookie crumb base and I used Creme de Menthe to get the flavour of the ice cream. It worked pretty darn good. I mean, can you really go wrong with alcohol and ice cream?

Strawberry Shortcake Ice Cream Cake

Oreo Ice Cream Cake

The base is an Oreo crumb cheesecake crust. I mixed in some crumbs with vanilla ice cream, and the garnished the top with some whipped cream, mini oreo cookies and loose crumbs.

Vanilla Ice Cream Cake, with a layer of Fudgeo cookie crumbs in the middle, topped with butterscotch, chocolate, whipped cream and peanuts.
